Located on the south-east coast of Ireland, Waterford Distillery is known for its barley-forward, terroir-driven, compelling Irish whisky.

This second edition from Ballykilcavan forms part of Waterfords Single Farm Origin series and is made using 100% Irish malted barley.

Almost four months older than the first edition, Ballykilcavan 1.2 does contain some of the first edition spirit.

The barley used to produce this whiskey was grown in the Irish barley heartlands to the west of Barrow County. The farm is home to David Walsh-Kemmis, and his fertile fields are sheltered by ancient woodland on some of the best soil in the region to grow malting barley.

This whiskey was matured in 36% first-fill American oak casks, 21% virgin American oak casks, 17% French oak casks and 26% were previously used to age Vin Doux Naturel (fortified wines) like in Sheestown 1.1.

Tasting Notes

Appearance: Yellow gold with heavy oils.
Nose: Red grapes on the nose with tilled earth and dried fruit.
Palate: An initial oily mouthfeel with white pepper, apricots, spices and toffee.
Finish: A dry, oily finish with spice, chocolate, malt that lasts.
