Irish Whiskey

Irish Whiskey has a long history dating back to medieval times, when distillation techniques were introduced to Ireland by monks. By the late 19th century, Irish Whiskey was one of the world's most popular spirits, particularly in the United States. However, Prohibition, political unrest and trade disputes contributed to a sharp decline during the 20th century.

By the 1980s, Bushmills and Midleton were Ireland's only remaining operational whiskey distilleries, before Cooley began production in 1987. Irish Whiskey includes single malt, grain and the distinctly Irish Single Pot Still style, made using both malted and unmalted barley.

Since the 1990s, Irish Whiskey has enjoyed a remarkable revival, with major investment in established distilleries and a growing number of new producers bringing renewed interest to this historic whiskey category.
