Highland Single Malt Scotch Whisky
Bottled by: Duncan Taylor 70cl / 53.7%
Duncan Taylor's Octave casks are one of the best innovations of recent years. A 500-litre fresh sherry butt is broken down and recoopered into eight smaller casks (hence the name) and then filled with mature single malt for a brief finishing period.
The small size of the casks gives a large surface area to volume ratio, leading to a fast interaction with the whisky. That's clearly been the result with this 2013 Tullibardine, which has picked up a lovely dark golden colour from just four months in the Octave.
The only downside with octave cask maturation is that because of the small size of the casks you only get a few dozen bottles of the finished whisky - just 65 bottles of this 8-year-old sherry finished Tullibardine 2013 were yielded from the cask.
