Speyside Single Malt Scotch Whisky Bottled By North Star Spirits 70cl / 56.9%
Distilled at Strathmill in December 2007 and matured for 19 years before being bottled in July 2026 by independent bottler North Star Spirits as part of Series 28, released to celebrate their 10th anniversary.
This Speyside single malt was matured in a Pedro Ximénez hogshead and bottled at 56.9% ABV without chill filtration or added colour, with the release limited to just 358 bottles.
Strathmill has a distinctive production setup, using purifiers on its spirit stills to return heavier vapours for further distillation. This encourages a lighter style of new make, traditionally noted for its delicate fruit and cereal character, providing an interesting contrast to the richer influence of the Pedro Ximénez hogshead used for this bottling.
North Star Spirits' tasting notes describe rosewood, Chesterfield and sherry-soaked almonds on the nose, followed by liquid liquorice tablet with a thick and oily texture on the palate. The finish brings sweet fruit bowl stewed with dark muscovado sugar.
