Island Single Malt Scotch Whisky
Bottled by: Duncan Taylor 70cl / 55.3%
Duncan Taylor's Octave cask programme is splendidly esoteric. Take a cask of fine single malt whisky - in this case Highland Park 1999 - and refill it into a series of tiny Octave casks, which are made by breaking down a normal sherry cask and re-coopering it into eight smaller sherry casks to give the whisky a short but intense secondary finishing period.
The consequence of this is that you end up with several different single malts where before you only had one. The downside is that you only get a few dozen bottles of each...
In other words, if you want one of these particular cask strength 21-year-old sherry finished Highland Park 1999s from Duncan Taylor Octave 5029274, you'd better get your skates on - there's only 67 of them! We've got a handful but they're going to fly out.
