... Established in 1998 by Andrew Symington, Signatory Vintage is now regarded as one of the most dynamic, flexible and innovative bottlers in the industry. Signatory bottle whiskies across a number of ranges such as Cask Strength and Un-Chill Filtered collections.
This Highland Park was distilled in 1991 and aged for 27 years in sherry butt #15086 before being bottled in 2018 with a yield of 545 bottles. This sherry cask bottling shows us the legendary single malt in a lovely peaty light.
The bottle is presented in a black lacker box with 2 Signatory Vintage branded Glencairn glasses.
Founded in 1798, Highland Park distillery is located in Kirkwall, the capital of the Orkney Islands. The distillery uses its own peat from neighbouring hills of Hobbister Moor to dry the barley which is still malted on site.
Official Tasting Notes
Colour: Mahogany with glints of old gold
Nose: The heady initial nose sees a rooty, salty, peat dominate before giving way to more earth and medicinal tones. Allowed to breathe and heady florals fill the air.
Palate: Juicy melon, fig and strawberry flavours at first, then increasingy floral and the finish is peaty and medicinal with the sweetness of the sherry coming through.
