A 6-year-old Dalmunach 2016 bottled in 2022 without colouring or chill filtration by Glasgow indie bottlers North Star Spirits for their 21st Cask Series outturn.
Dalmunach is Pernod Ricard's Speyside mega-distillery answer to rival Diageo's construction of Roseisle, and was built on the grounds of the old Imperial distillery. Dalmunach only began distillation in 2014 and very few bottlings from the distillery have yet been released, so this is something of a coup for North Star. This 2016 Dalmunach was finished in a ruby port barrel and yielded 285 bottles at a hefty 56.4%.

Nose: White linen tablecloth at the end of a boozy dinner.
Palate: Rich beyond belief. A 15 tog duvet of fortified wine that will keep you warm.
Finish: Finish with cheese.
