Kilchoman 2016 Cognac Cask Matured is a limited edition first bottled in 2023. This exciting new addition to Kilchoman distillery's portfolio is bottled at 50% without colouring or chill filtration.
Kilchoman Cognac Cask Matured 2023 Edition was distilled in 2016 and matured full term in an assemblage of 31 barrique casks that previously held top class cognac before being filled with Kilchoman's splendid spirit, yielding an edition of just over 15000 bottles in 2023. Expect a riot of orchard fruit flavours (pear, apricot etc) balancing out Kilchoman's tarry, ashy peatiness.

Nose: An opening note of rich apple and pear forms the structure for this release. Herbaceous fresh fruit begins to make its way as the whisky begins to open. Subtle tones of honey and warming spice develop over time. Peat remains delicate on the nose, bringing a dryness to this release.
Palate: The texture provided by a slow distillation and the influence of the Cognac oak allows for a buttery texture which continues throughout. Dried lemon and apricot combine with cinnamon and nutmeg which are held together by an influence of toasted oak and sweet peat smoke.
Finish: The depth of flavour that the Cognac casks have provided the Kilchoman spirit is unrivalled; dried fruits and marzipan make way to crystallised ginger, balancing sweet and spice. Lingering peat smoke is lightened with the influence of citrus oil making itself known across the palate.

My usual preference is for a peaty whisky; however, the Aberargie Inaugural Single Malt 2026 was an enjoyable experience. I will definitely be trying more.
I’m not a great fan of Peated Whisky but this one is superb, gently Peated Sherry Hogshead doesn’t get better than this very smooth Whisky, a very pleasant surprise.
