Distillery Bottling 70cl / 49.1%
A limited edition Talisker 44-year-old, Forests of the Deep is the second of Talisker's Xpedition series of prestige releases, and is produced in collaboration with marine conservation charity Parley, who undertook an expedition to the underwater sea kelp forests off the Cape of Good Hope with some Talisker oak staves on board.
Talisker Forests of the Deep is from a small batch of 44-year-old Talisker that was finished in ten American and European oak refill hogshead and butts that incorporated these staves, and were recharred with shavings from worn oak staves and a small amount of sustainably sourced Scottish sea kelp.
Bottled at 49.1%, Talisker 44-year-old Xpedition II Forests of the Deep is a limited edition of just 1997 bottles worldwide.

Official Tasting Notes
Appearance: Deep clear amber, excellent beading.
Nose: Mellow overall, with a light peppery prickle at first. Deep, dense and complex. The top notes speak of wood wreathed in fragrant smoke and rich maritime hints of ships and the sea, as enticing traces of seaweed, salt crystals and warm sand mingle with sweeter hints of rich toffee.
Palate: A big, wonderfully oil smooth texture and mouthwatering umami-rich taste, as waves of smoky sweet rich intensity meet the full force of the sea mid palate. The effect becomes savoury and lightly drying as a delicious peppery warmth surges forward to embrace these smooth, rich flavours of the deep.
Finish: Really long, with soft traces of candle wax as a sweet chilli-pepper warmth suffuses the palate, becoming mouth-cooling if water is added.
