The Chaos series from North Star was produced to give something to those sherried Islay fans at a very reasonable price. And unlike 2020 this Chaos is very welcoming too.
This small-batch whisky is produced from 2 sherry butts from Caol Ila, one distilled in 2006 and the other distilled in 2009, and a refill hogshead from Caol Ila distilled in 2009 that was then finished in an oloroso cask.
The casks were then vatted and the ABV reduced down to 50% resulting in a stunning sherried Islay daily drinker with a yield of 1500 bottles.
Again, the North Star release punches well above its price point. A top dram indeed.
