Mount Gay Black Barrel Double Cask is a Bajan rum from Barbados's oldest distillery. The rums used for Mount Gay's Black Barrel are from both pot stills and column stills, and are aged between 3-7 years.
The key difference with this rum, however is that it uses a technique borrowed from the whisk(e)y industry - a six month finishing period in recharred American oak casks, most famously used by Jameson for their Black Barrel whiskey. This process adds an extra layer of vanilla and spice to the dried fruit, caramel and toffee flavours in the rum.
