Another big step in Kilchoman's evolution, Kilchoman PX Sherry Cask Matured is the distillery's first major worldwide limited batch sherried bottling.
The 33 casks for this first batch Kilchoman PX Sherry Cask Matured were selected by Anthony Wills from Kilchoman’s sherried stock. Nine of these were full maturation Pedro Ximenez sherry casks, while the remaining 24 casks were re-racked into Pedro Ximenez casks for 12-18 months before the final vatting, and bottled at 47.3% - yielding a total of 12,000 bottles for worldwide release.
We’ve said it before, but it bears repeating - while the combination of peated spirit and heavy sherry can be difficult to integrate, somehow Kilchoman always seem to achieve a great balance, so we’re excited about this release.

Complex with subtle dried citrus, raisins as I would usually like in a sherry cask but something (the smoke, grape skins ? from the sherry cask?) unwelcome reminds me of grappa.
