We are super-stoked to finally get our hands on our very own exclusive Octave cask of Dalmunach 2016! Only a handful of casks from Chivas Brothers' mega-distillery Dalmunach in Speyside have been released so far, so this is a real treat.
We sourced this exclusive Dalmunach from Duncan Taylor, who have a small amount of Dalmunach casks that they've been reracking into sherry octaves - tiny sherry barrels made by splitting a bit 500 litre sherry butt into eight smaller casks.
Octave casks typically only hold around 50-60 litres each, and while they impart delicious sherry flavours there's never many bottles yielded because of this small size.
Whisky-Online’s Dalmunach 2016 started life in an American standard barrel before being reracked by Duncan Taylor into a first fill Oloroso sherry octave for the last three months of its maturation. Dalmunach 2016 Octave Cask #10825703 was bottled in August 2021 as a 5-year-old at its natural strength of 55.4%, with just 81 bottles yielded from the cask.

This is a hidden gem. I tentatively purchased my first bottle early in November. I say ‘tentative’ because I normally opt for a longer ageing period. I was pleasantly surprised to discover a very well balanced, slightly peaty malt that drinks perfectly with a dash of water. I think I’m on my 6th bottle now and I will shortly order the 7th.

Complex with subtle dried citrus, raisins as I would usually like in a sherry cask but something (the smoke, grape skins ? from the sherry cask?) unwelcome reminds me of grappa.
