Peated whisky is made by using barley that has been dried with peat smoke during the malting process. Peat is organic plant matter, particularly moss, that has partially decomposed and been compressed over thousands of years in the boggy terrain so abundant in Scotland and Ireland.
The smoky flavour in your whisky comes from organic compounds in the peat smoke called phenols. When peat smoke is used in the malting process to dry the wet barley, some of the smoke’s phenols adhere to the outer skin (husk) of the barley grains. These phenols remain in the peated barley throughout the rest of the journey as it is fermented and distilled into whisky, although some of the whisky’s phenolicity is lost naturally during the distillation and ageing process.
Limited editions are a fantastic method for spirits companies to liven up their standard ranges and showcase their most special liquid in one-off batches like Diageo’s annual Special Releases. They’re also a great way to test innovations, with the most successful limited edition whiskies often paving the way for future core range releases, like the famous Glenmorangie wood finishes or Aberlour A’bunadh.
Of course, limited editions aren’t just for official bottlers - quite the reverse, in fact, as independent bottlers’ whiskies and rums are almost all limited editions. With much less inventory from each distillery to work with, indie bottler’s whiskies are limited by definition, and you’ll find all our independently-bottled single cask whiskies and small batch bottlings in this section
Single casks are the rarest bottlings by definition. In the whisky industry, standard official bottlings of any given single malt whisky may be the product of hundreds of casks and come in batches of tens of thousands of bottles. By contrast, a single cask of whisky is painfully finite: the Scotch Whisky Regulations dictate that whisky must be aged in casks with a capacity of less than 700 litres, and in practice most of the larger casks used to mature whisky are sherry butts, which rarely exceed 550 litres.
The vast majority of casks used to age spirits are hogsheads, which are around half that size - and that’s before the angels have had their share. It’s therefore not uncommon for long-aged whiskies and rums to yield fewer than 100 bottles from a single hogshead cask. At the other end of the scale are those bottlings where two smaller casks are reracked into a larger cask for finishing. These editions are bottled from a single cask even if they started out in two separate casks, so we've included them in this section too.
The good news is that tasting single casks remains one of the greatest pleasures available to spirits fans, with an almost unlimited potential for discovery.
