Located on the south-east coast of Ireland, Waterford Distillery is known for its barley-forward, terroir-driven, compelling Irish whisky.

Sheestown 1.1 forms part of Waterfords Single Farm Origin series and is made using 100% Irish malted barley.

Sheestown is known locally as "the place of the lush grass", and is home to Philip O'Brien who has farmed this land for half a century.

This whisky was matured in 35% American first-fill oak, 21% virgin American oak, 25% premium French oak and 19% casks previously used to age Vin Doux Naturel fortified wines.

Appearance: An amber hue with lingering oils.
Nose: Earthy notes on the nose with clove, poached pears and honeycomb.
Palate: Gentle spice mix greets the palate with lasting cloves that dries with citrus peel marmalade and fresh honey.

Irish Single Grain Whiskey

Apart from flavour, the uniqueness of this single grain bottling is what makes this a great grain whiskey.

Starting off with an unconventional mash bill of 95% corn and 5% malted barley, it is then triple distilled and fully matured in ex-Cabernet Sauvignon red wine casks from California.

The second edition of Teeling's Wonders of Wood is a single pot still Irish whiskey made with a 50/50 split of malted and unmalted barley and has been bottled at 50%.

Teeling Wonders of Wood Second Edition has matured full term in casks made of virgin Portuguese oak - known for its high tannins - and apparently gives the whiskey notes of savoury marmalade, tobacco and pepper. This should be a delightful drop.

Bottled at 46% without chill filtration, Writers' Tears Double Oak is an Irish whiskey to savour, and works best as a contemplative after dinner dram with a bit of time in the glass.

While they await the maturation of their own spirit, Hinch are releasing a carefully-curated range of this sourced whiskey.

Hinch Single Pot Still Irish Whiskey has been matured in ex-bourbon and sherry casks and has been bottled at 43%.

Bottled in 2021, this 30-year-old Teeling Vintage Reserve Irish single malt whiskey was matured in ex-bourbon and Sauternes casks, and bottled at 46% without chill filtration. An edition of 4000 bottles, but they won't last long.

This Teeling 30-year-old Vintage Reserve will be another of the astounding early 1990s distillates from a northerly Irish whiskey distillery - they are stunning fruit bombs and if you haven't already tried them you should try and rectify that as soon as possible, because they are probably the best Irish single malt whiskeys ever distilled and they certainly aren't getting any cheaper as their reputation grows.

A bottle of Bushmills Caribbean Rum Cask Finish blended Irish whiskey, which was launched in early 2021 and has been a popular addition to the distillery's range.

As the name implies, the malt component of this Bushmills blend includes whiskey finished in casks that formerly held Caribbean rum. Rum seems always to go well together with Irish whiskey, enhancing the spirit's natural exotic notes and adding sweet syrup and tropical notes of its own. An easy-drinking 40% blend perfect for sweet-toothed Irish whiskey fans.
