A single cask Ailsa Bay 2012 bottled as Dalrymple in 2023 by maverick indie heroes Little Brown Dog at cask strength without colouring or chill filtration.
Although the distillery has been active since 2007, this is a rare sighting of William Grant's Ailsa Bay whisky in the wild - the distillery's output is almost entirely reserved for the company's blended whiskies and very few independent casks have so far seen the light of day.
Consequently, and in common with most if not all indie-bottled casks from Grant's distilleries, this Dalrymple is technically not a single malt whisky because apparently it was 'teaspooned' - the absurd practice by which adding a tiny amount of other single malt whisky makes a cask no longer single malt whisky itself. We explored this topic in detail here if anyone's interested.
Anyhow, this marvellous Ailsa Bay / Dalrymple spent its maturation in a first fill Oloroso sherry butt that yielded a generous 700 bottles at its enticing natural cask strength of 56.8%. We'd advise haste if you'd like one for yourself.

Having been fortunate enough to visit Scotland’s little gem distillery twice in the past ( amongst several others) it soon became my favourite dram. This like all its predecessors is a pleasure to savour and a real treat . The only problem is the self discipline required to make the bottle last long enough and show the respect and gratitude to its makers in producing this and in my humble opinion all others from Scotland’s little gem.
